Chinese kebab with vegetable by Chef Rida Aftab


















Ingredients:
Chicken mince                               1/2 kg
Bread (soaked)                              2 slices
Capsicums (cut in cubes)            2
Onion (cut in cubes)                      2
Green chilli (cut in long strips)     4
Tomato ketchup                             1 cup
Soya sauce                                     1 tbsp + 1/2 cup
Crushed black pepper                  1 1/2 tsp
Ginger garlic paste                        1 tsp
Vinegar                                            1 tbsp
Salt                                                   1/2 tsp
Oil                                                    4 tbsp

Method:
-         Blend mince and bread in blender. Add ginger garlic paste, 1 tsp black pepper, 1 tbsp soya sauce and salt and mix.
-         Wet your palms and make small, long kebabs and set aside.
-         Heat oil in a wok and fry kebabs till golden. Add vegetables and cook for 1 minute on high flame.
-         Add remaining black pepper, salt, 1/2 cup soya sauce, vinegar, and tomato ketchup, and stir it. Remove from flame after 1 minute.

Chicken Dumplings in Ginger Sauce by Chef Shireen Anwar


Ingredients
Chicken                                   250gm or 3 boneless breast piece (cut into small 1/4 inch cubes)
Cabbage finely chopped            1/2 cup
Carrots finely chopped              1/2 cup 
Egg                                         1
Ginger finely chopped                1 tsp
Soya sauce                              1 tbsp
Sugar                                       1/2 tsp
White pepper                            1/2 tsp
Salt                                          1/2 tsp
Corn flour                                  2 tbsp heaped
Spring onion leaves                    2 tbsp (finely chopped)
Flour (Maida)                             3 tbsp

Ingredients for Ginger Sauce
Oil                                            1/4 cup
Chicken stock                            1 cup
Capsicum                                  1 (cut in thin strips)
Onion                                        1 (sliced)
Sugar                                        2 tsp
Salt                                           1/2 tsp
White pepper                             1/4 tsp
Soya sauce                               2 tbsp
Ginger                                       1 tbsp heaped (cut thin slices)
White vinegar                             4 tbsp

Method for Dumplings
-         Marinate tiny cubes of chicken with salt, white pepper, sugar, corn flour, flour,  egg,  chopped cabbage, carrot, spring onion, finely chopped ginger and soya sauce
-         Mix all well and make small balls of it (like pakora) and deep fry for 10 minutes till golden brown.

Method for Ginger Sauce
-         Heat ¼ cup oil, fry ginger, then add  sliced onion, then fry for 2 minutes and add capsicum.
-         Add salt,  white pepper, sugar,  white vinegar, then add soya sauce and chicken stock,
-         Cook till it stats boiling, then add corn flour paste to make sauce thick,
-         Now add in your dumplings and serve immediately.

Chicken shashlik with gravy by Chef Shireen Anwar


4 servings

Ingredients:
Chicken boneless                     1/2 kg ( cut1.5 inch cubes)
Capsicum (cut in big cubes)       2
Tomatoes (cut in big cubes)       2
Spring onion bulbs                     8
Oil                                           1/4 cup
Chili powder (pissi lal mirch)       1 tsp
Garlic paste                              1 tsp
Mustard paste                           1 tsp
Salt                                          1 tsp
Wooster sauce                          1 tbsp
Soya sauce                               1 tbsp
Chili sauce                                1 tbsp
Ketchup                                    4 tbsp
Boiled rice                                to serve

Ingredients for chicken gravy
Chicken                                                 3 breast pieces (cut tiny cubes)
Capsicum                                              1
Wooster sauce                                      1 tsp
Soya sauce                                           1 tsp
Tomato paste                                        1 tbsp
Chili sauce                                            1 tbsp
Garlic paste                                          1/2 tsp
Mustard powder                                     1/2 tsp
Salt                                                      1/2 tsp
All spices (garam masala)                      1/4 tsp
Oil                                                        2 tbsp
Ketchup                                                4 tbsp


Ingredients for BBQ sauce
Apple (grated)                                       1/2
Banana (grated)                                    1/2
White vinegar                                        1/2 cup
Ketchup                                               1/4 cup
Salt                                                     1/2 tsp
Chili sauce                                           2 tbsp
Sugar                                                   2 tbsp


Method:
Marinate the chicken with salt, chili powder, mustard paste, soya sauce, garlic paste, Wooster sauce and keep it aside for about 1/2 an hour,
Heat oil and put this marinated chicken and cook it for about 5 minutes. When it is half done add ketchup and chili sauce and stir fry it for some time

Method of BBQ sauce:
Add white vinegar, ketchup, sugar, apple, banana, salt and chili sauce and cook it until it is thick, now blend it in blender. Then again cook it for 2 minutes, then place the coal on onion peel (chilka), in middle of the sauce, then put 2,3 drops of water on it, cover the lid. It will give very good smoked smell.BBQ sauce is ready

Now take wooden skewers, start by adding spring onion bulb, then capsicum , then tomato and then cooked chicken cube,  repeat the process 2 times more, ending with spring onion bulb. Your shashlik tick is ready

Method of Chicken gravy:
Now heat oil in a pan, add garlic paste and chicken and sauté it then add salt, Wooster sauce, soya sauce, mustard powder, tomato paste, 1/4 water, chili sauce and tomato ketchup and all spices (garam masala) and cook it for some time so that chicken gets tender and thick gravy is left. Lastly add 1 finely chopped capsicum Your gravy is ready

Now grill shahshlik stick in frying pan for 5 minutes, put some oil and place the shashlik sticks on it adding BBQ sauce while grilling so that chicken gets saucy and get well cooked.

Now for serving, first place boiled rice in a dish, put chicken gravy on it and in the end place shashlik sticks on it

Chicken Jalfrezi

Ingredients:
Chicken                        1 kg (in cubes)
Ginger                           1 tsp (sliced)
Tomato                         2 (chopped)
Onion                            2 (small size) (chopped)
Red chilli powder            1/2 tsp
Green chillies                2 to 3
Black pepper                 1/2 tsp
Salt                              1 tsp
Ketchup                        2 tbsp
Soya sauce                   1 tbsp
Chinese salt                  1 tsp
Oil                                1/2 cup
Worcestershire sauce    2 tbsp

Method:
Heat oil in a frying pan, and fry onion and ginger for 2 minutes. Then add all the ingredients including chicken and cook it on medium flame until chicken gets soft.
When it gets ready server it with rice.

Chicken Chow mien

Ingredients:
Serves 6

Spaghetti                                  1 packet
Chicken cubes                           2 cup
Capsicum (cut in cubes)             ½ cup
Garlic (chopped)                        2 tsp
Chicken stock                           1 cup
Salt                                          as required
Black pepper                             as per taste
Soya sauce                               1/4 cup
Chilli sauce                               1/4 cup

Method:
-          Boil the spaghetti and allow it to cool. Then take some oil and fry the spaghetti, and while frying keep separating the spaghetti with the help of fork.
-          For Sauce: mix chicken stock, salt, black pepper, soya sauce, chilli sauce and keep it aside.
-          heat oil in a pan, and fry garlic fro 30 sec, then add chicken, and fry for 3- 5 minutes and then place this chicken in a separate bowl.
-          Then stir-fry all the vegetables in a pan. After that cook that sauce for 2 minutes on slow flame. Add chicken in it and mix it well and cook for some time.
-          Then pour the sauce on noodles.

Chicken Manchurian Recipe


Ingredients:
Chicken cubes               200 gms
Chicken stock (yakhni)   1 ½ cup
Tomato ketchup             3 tbsp
Vinegar                         2 tbsp
Soya sauce                   1 tbsp
Salt                              ½ tsp
Red chilli powder            ½ tsp
Sugar                            ½ tsp
Corn flour                      3 tsp
Egg                              1
Tomato                         1
Onion                            1
Oil                                ½ cup and 1 cup for frying
Green chilli                    2
Ginger and garlic            as required

Method:
-          Marinate the chicken cubes with 2 tsp corn flour, oil, egg, salt and keep aside.
-          Finely chop the onion, tomato, green chilli, garlic and ginger.
-          Pout oil in a wok, and deep fry the chicken fro a little while and strain it.
-          Then in a pan fry ginger, garlic, then add onion and chilli and cook it further.
-          Add tomato, chicken stock and let it boil.
-          Then add tomato ketchup, soya sauce, vinegar, red chilli powder.
-          Dissolve corn flour in water. Add this mixture in the gravy to make it thick, serve hot with rice
